EV’s Take: Crisp, Flavorful, and Surprisingly Similar to Potato Chips
As far as vegetable chips go, Root Foods Zucchini Chips are one of the better versions we’ve tried. They have great crunch, simple ingredients, and enough real zucchini flavor to stand apart from generic veggie snacks.
What surprised us, though, was how nutritionally similar they are to regular potato chips. Maybe it’s just our brains, but I guess we assumed zucchini chips would magically have zero calories, but aside from the sodium, these are nutritionally very similar to your regular old run-of-the-mill tater chips. You may get slightly more fiber and a little less saturated fat, but the calories and overall fat content are still very close. That doesn’t necessarily make them bad, but it will make you think twice before you house an entire bag in one sitting.

We think these might be best when they’re treated less like a replacement for potato chips and more like a crunchy garnish. You could easily crumble them over salads, grain bowls, or summer pasta dishes, and they could add great texture and savory flavor without the vegetal notes becoming overwhelming.

Nutritionally, these end up looking remarkably similar to standard potato chips. They do offer a slightly lower caloric profile with slightly more fiber and a little less saturated fat, but the calories and fat content are still fairly high for what feels like a vegetable-forward snack. I do appreciate that the sodium is significantly less than in standard potato chips. These contain just 15mg of sodium per 1-ounce serving, while traditional potato chips can contain 150mg or more per 1-ounce serving.
How Did EV Eat Them?
We liked these best crumbled over salads and simple summer pasta dishes, where the crunchy texture and savory flavor added a nice contrast without becoming overpowering. We’ll report back once we serve them on pasta or salad!
