EV’s Take: An Egg-cellent Egg Replacement
One of Exploring Vegan’s very first reviews was Just Egg’s vegan egg scramble, and we loved it. Given our excitement for their bottled egg mixture, it should be no surprise that we love Just Egg Folded Eggs, too.
If you’re craving scrambled eggs, the bottled formula might be right up your alley. The folded eggs are the way to go if you want ease and speed. These eggs require nearly no effort, and you can have an egg sandwich on the table in mere minutes.
My husband and I both loved the texture of the folded eggs. They’re hearty, easy to cook, and taste great on a bagel or English muffin. They aren’t overly seasoned, so you’ll want to pair them with something on your sandwich, like plant-based cheese, ketchup, hot sauce, plant-based breakfast sausage, or vegan bacon.
Just Egg Plant-Based Folded Egg Ingredients
The ingredient list is pretty straightforward. Just Eggs uses mung beans as its primary protein source. They also use canola oil, cornstarch, and a few flavoring and coloring ingredients like garlic and onion, as well as carrot and turmeric extractives.

Water, Mung Bean Protein, Expeller-Pressed Canola Oil, Corn Starch, Contains less than 2% of Baking Powder (sodium acid pyrophosphate, sodium bicarbonate, corn starch, monocalcium phosphate), Carrot Extractives (color), Dehydrated Garlic, Dehydrated Onion, Salt, Transglutaminase, Turmeric Extractives (color).

These are very similar to traditional eggs in nutrition. A traditional medium-sized egg yields just over 6 grams of protein and just under 80 calories. The big difference is that a traditional egg will contain about 1.5 grams of saturated fat and 187mg of cholesterol. Just Egg contains no saturated fat or cholesterol and has a few grams of polyunsaturated and monounsaturated fats, generally considered healthy fats. Since this is a processed food, the sodium content will be higher than that of traditional eggs. A medium egg will have 62mg of sodium, while one portion of Just Egg has 300mg. This is even higher than that of plant-based competitors. For example, Hodo All Day Scramble has 290mg of sodium in an 85g portion of its eggs, delivering less sodium in a larger portion.
Sodium is always my biggest concern when it comes to many plant-based products. Is 300mg outrageous? No, it’s just 13% of the daily recommended intake, but when you add plant-based sausage or vegan cheese, it can easily make a very sodium-heavy breakfast sandwich. Of course, this is very true of any diet–meat-based or vegan–but it is something to consider as you build your plant-based meal plans against your personal dietary goals.
How to Cook Just Egg Folded Eggs
Cooking Just Egg’s folded eggs is as easy as can be. You only need a skillet and a few minutes. Alternatively, you can cook them in a toaster, oven, microwave, or air fryer.
- Toaster: Pop them in a standard toaster and cook for 6½ minutes.
- Skillet: Heat a touch of oil in a skillet over medium heat. Once hot, add the folded egg and cook for 5 minutes, flipping once midway through.
- Oven: Bake at 375ºF on a parchment-lined baking sheet for 15 minutes.
- Microwave: Place the folded egg on a microwave-safe plate and cover it with a paper towel. Microwave on high for 45 seconds. Flip and microwave for 30 seconds. Time may vary depending on your microwave.
- Air Fryer: Coat the air fryer basket with a touch of oil. Air fry the folded egg for 8 to 10 minutes at 400ºF. Flip once midway through cooking.
I chose the skillet method, and it worked out perfectly. The egg was heated through in the recommended cooking time and didn’t stick to the skillet.
How did EV eat Just Egg Folded Eggs?
We didn’t explore much beyond the standard breakfast sandwich with Just Egg. We tried the vegan folded eggs on an English muffin with vegan cheese and plant-based breakfast sausage. We also made a delicious plant-based cream cheese and plant-based egg bagel.
You needn’t limit yourself to breakfast sandwiches as we did. Just Egg’s folded eggs would also work well in breakfast burritos, or you can dice up the folded eggs and add them to fried rice. Their website has plenty of recipes to inspire your next plant-based egg cooking project.

I highly recommend the Just Egg products. I’ve been eating them since they were launched. The taste , texture and consistency has always been quality. Wish they were healthier / slightly more protein but its a good buy.
