Overnight oats are one of my favorite things to meal prep for the week. You can make a big batch and eat them for breakfast or snacks all week long.
Since I was reviewing MALK oat milk, I decided to test it out with banana bread overnight oats. The vanilla MALK is really perfect for this, though, because it is an oil-free oat milk, the result is a bit thinner. If you make this recipe with Oatly, it’ll be a thicker oat texture.
How to make these vegan banana bread overnight oats
Like most overnight oat recipes, this one is a breeze to throw together. Simply mash, mix, and spoon into your favorite containers.
What you need
- Bananas: I recommend using slightly over-ripe bananas so that they’re easier to mash.
- Oats: Use old-fashioned rolled oats, not steel-cut oats.
- Oat milk: I used MALK vanilla-flavored oat milk, but your favorite plant-based milk works here.
- Greek yogurt: I used Kite Hill’s plant-based Greek yogurt, but your favorite vegan Greek yogurt will work here. You can also use vanilla-flavored yogurt! I recommend yogurt, particularly if you’re using MALK, because it’ll help thicken it up.
- Flavoring: I add maple syrup, vanilla, and shredded coconut to flavor the oats.
- Walnuts: I love nuts in my overnight oats for a bit of texture, and they also make them heartier. You can use pecans or almonds if you prefer.
How to make it
- Step 1: Mash up the bananas until smooth.
- Step 2: Add the oats, milk, and yogurt and stir to combine.
- Step 3: Fold in the maple syrup, vanilla, coconut, and walnuts.
- Step 4: Divide between your favorite containers! I saved lots of little 4-ounce jars, which work perfectly for small portions throughout the week.
Despite the name, overnight oats are really ready to eat in a couple of hours!
How long do overnight oats last in the refrigerator?
These vegan overnight oats will last up to 5 days in the refrigerator. Be sure to store them in an airtight container.
Vegan Banana Bread Overnight Oats

- 5 medium, ripe bananas
- 3 cups old-fashioned oats
- 3 cups Vanilla Oat MALK
- 1¼ cup Kite Hill Greek Yogurt
- 2 teaspoons ground cinnamon
- ¼ maple syrup
- 2 teaspoons vanilla extract
- 4 tablespoons shredded unsweetened coconut
- ½ cup walnuts, broken into pieces; plus more for serving
Instructions
Mash the bananas:
- Peel the bananas and place them in a bowl. Mash with a fork until smooth.
Make the base:
- Add the oats, Vanilla Oat MALK, and Greek yogurt to the bananas. Use a rubber spatula to mix until smooth.
Finish the overnight oats:
- Fold in the cinnamon, maple syrup, vanilla extract, coconut, and walnuts. Taste and add more maple syrup or cinnamon if you like.
To serve:
- Transfer the oats into mason jars and refrigerate for at least 2 hours or overnight. This recipe yields 8 8-ounce servings. You can serve the overnight oats with more walnuts on top or chopped fruit.
